This Festive Bikini – The Method
WHere is a simplified take on a beverage found on our latest menu. Designed as a batch prepared mix that's bursting with the flavours of the Christmas time, making it perfect for hosting a holiday party. Any leftover citrus syrup to use in brunch beverages, sweets, or to mix more rounds of bikinis.

Makes enough for 10 guests
Ingredients for the Clementine Cordial (yields 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g fine sugar
For the Cocktail (makes 850ml, enough for 10)
400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, as a final touch
Instructions
Making the Syrup: Put the listed items in a pot, heat until it reaches a gentle boil, agitating until the sugar dissolves. After that, take off the heat and leave to reach room temperature fully. Transfer to a sealable bottle, seal and store in the fridge, where it will keep for up to four weeks.
To make Batch Mix: Combine the specified spirits and syrup into one sizeable container, allow it to infuse for an hour, then pass it through best through cheesecloth, to ensure it's fully clarified.
When ready to serve: Add 85ml from the premix into a mixing glass packed with ice, and agitate gently for one minute to cool it down. Pour into a frosted cocktail glass or a similar vessel, top with some cranberries and finish using a brief mist of the essential oil over the top.
